Chocolate Chip Rainbow Cupcakes

 Hey there ;D 
Okay, so when I made this, I was a baker in training- I had no idea what I was doing. But I fell in love with it and wanted to do something for my bestest buddy! When faced with the challenge of what I would make her for her birthday, I almost knew what to make. Obviously I should make a cake, but that would never fit into a High School locker :/

So ,Cupcakes where that way to go! I found a way to make a rainbow cake for my little sister's birthday party months before hand:
{Yes, it was Lorax themed and yes, this was one of my first actual decorated cakes. No judgements}

Anyway, I found out how to make a rainbow cake and decided, why not make rainbow cupcakes? I made them two different ways. The first was every cupcake was a solid color, and the second was each cupcake was layered in different colors. I liked the layered ones better, but whatever floats your boat is alright with me.

Just making them rainbow wasn't enough, so I decided to add chocolate chips! Yum! 



Chocolate Chip Rainbow Cupcakes
1 box of white cake mix
24 oz. of clear soda {Yes, soda! And by clear, I mean Sprite or something along those lines}
Gel food coloring

1)Preheat to according to the directions on the box.
2)Line a muffin tin with cupcake liners. Set aside
3)Combine the soda and cake mix like normal. The batter will be light and airy! 
4)Divide batter evenly {Or as close as you can get} into bowls. I didn't really have enough for all six colors, but five is  close enough....right?
5)Using the gel food coloring, pick and choose what colors you want! 
6)When layering the colors, what I did was spoon in about a tablespoon or two at a time, then dropped in two chocolate chips. This will make sure the chocolate is evenly distributed!
7) Pop the Cupcakes in the oven according to the directions on the box
8) they pretty much go with whatever frosting. But Chocolate is best for the chocoholics {Like me}


Can i just add that these pictures are four months old, so I don't have a picture of a final product because I didn't know I would be blogging??

Hey guys! I know I'm probably talking to...no one... but that's ok. People need to talk to themselves sometimes, right? 

Anyway, I'm Amanda and this is my blog! Baking has pretty much consumed my life. It's in my blood. My Great-Grandmother was a baker, both my Grandmothers are bakers, my mom cooks, and my dad cooks! Maybe it has to do with my thick Italian-German heritage, I don't know. But I do know that my mom thinks it's getting out of hand. [She's ruining all the fun] But that doesn't stop me! I find every way I can to make scrumptious treats.

So, I hope someone finds this blog, and I'm not alone? But that's ok. See you soon!
